Between hills and mountains, gentle spring sources and violent rivers, she takes the best of what is grown, fished, foraged or hunted - and then turns it upside down. To explore new tastes through old never outdated, but always questionned, traditions. Fermented dairies, raw products and the freshest ingredients from the green and wild surroundings – say the sweetiest ever little peas or the tenderest melting baby bear cheeks – compose the daily grammar of a Post-Pastoral cuisine reaching out to an inner, intimate but also collective voice telling many stories at the same time.
