For seven years, Petter Nilsson ran one of the most celebrated creative neo-bistros in Paris, La Gazzetta. This Swedish expat brought “the country to the city”, as he put it recently, cooking in clay and hay before everyone else did, celebrating vegetables over proteins before that became a global trend, too. In late 2013, after more than a decade in France, he returned to Sweden.

The restaurant at Spritmuseum is a creative melting pot. The menu is based on thoughts and lived experiences as well as seasonal locally sourced ingredients.
